What I like about Asia is how you’re never done with finding new flavors. I’m always looking forward to these surprises—the flavors and the way it’s cooked is so different from how we do it in France. This can inspire me to create a dish, even though I do not try to copy or do it the same way. I think it’s interesting. I do dim sum a little differently from the locals. Instead of eating everything as they come, altogether, I prefer to eat the steamed first before the roasts. As a Frenchman and a chef, this is something that I do because in France, we start light and we go up.
It’s the only restaurant that, in 9 years, is full every day for lunch and dinner. It’s not because they’re 3 Stars, but it’s very traditional, everything’s refined. Everything is presented well.

If I have to do one which is nice in terms of price, not too crazy, not too expensive. It’s very classic hotel standard dim sum. Solid.

This guy is a guy who’s doing dim sum lunch and dinner, but he does it the western way. He does dim sum with peking duck flavors, kebab flavors, sea bass pesto, for example, but he does it with the bun, actually. I like it, I think it deserves to be alive! This guy is friends with cheese master Patrice Marchand. One of his dim sum, Truffle Brie Dumpling, is very good. Out of this world!

They really customize each dim sum pretty well. It’s very outstanding. They do something a bit more than Lung King Heen. It’s in the Lisboa Hotel. Everybody does the bao, but they do it shaped like a hedgehog—and they do it half crispy, half moist. Hargao they make into a goldfish. Their whole entrance is goldfish. I really like the theme. There is a beautiful dim sum, it looks like a handbag, it’s pork floss with pastry. Abalone Puff Pastry. That is my favorite one!

A bit more casual. This is very traditional, solid dim sum. It’s not refined. It’s a huge restaurant. They do their own XO sauce, which is quite nice.

They do the crispy pork with the mustard sauce. They cut it so thin, it’s like they slice it by laser. I really was impressed because they’re consistent on this. It’s always full! I always like it there. The Peking Duck is quite good too. The Barbecue Pork Bun.
